Micro-Grilled Onion Potatoes

Ingredients
- 4 medium baking potatoes 4 4medium baking potatobaking potatoes or sweet potatoes
- 1 red onion , thinly sliced1 1red onionred onions, thinly sliced
- 1 tsp extra-virgin olive oil 1 1tsp tspextra-virgin olive oil
- 1/4 tsp fresh rosemary 1/4 1/4tsp tspfresh rosemary
- 1/4 tsp salt 1/4 1/4tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
Preparation
Scrub potatoes. Cut at 1/2-inch (1 cm) intervals almost but not all the way through. Fill slits with thinly sliced red onion; sprinkle each potato with olive oil, rosemary, salt and pepper.
Microwave at High until fork-tender, about 10 minutes. Slip 2 metal skewers through centre of each. Place on greased grill over medium-high heat; close lid and grill for 10 minutes, turning once.
