Micro-Grilled Onion Potatoes

Ingredients:

4 medium baking potatoes or sweet_potatoes
1 thinly sliced red onion
1 tsp (5 mL) extra-virgin olive oil
1/4 tsp (1 mL) each fresh rosemary, salt and pepper
Preparation:
Scrub potatoes. Cut at 1/2-inch (1 cm) intervals almost but not all the way through. Fill slits with thinly sliced red onion; sprinkle each potato with olive oil, rosemary, salt and pepper.
Microwave at High until fork-tender, about 10 minutes. Slip 2 metal skewers through centre of each. Place on greased grill over medium-high heat; close lid and grill for 10 minutes, turning once.
