Mixed Greens with Ginger Vinaigrette

Servings: 4

Ingredients:

    2 tbsp (25 mL) each seasoned rice vinegar and vegetable oil
    2 tsp (10 mL) grated gingerroot
    1/2 tsp (2 mL) sesame oil
    Pinch salt
    4 cups (1 L) mixed greens
    1/2 cup (125 mL) each thinly sliced cucumber and radish
    2 tbsp (25 mL) thinly sliced green parts of green onion

Preparation:

In salad bowl, whisk together rice vinegar, vegetable oil, gingerroot, sesame oil and salt.

Add mixed greens, cucumber, radish and green onion. Toss to coat.
