Dress up your regular salad with torn lettuce by drizzling some homemade tomato vinaigrette, made with good quality olive oil, on top.
Ingredients
- 2 tbsp finely diced oil-packed sun-dried tomatoes 2 2tbsp tbspfinely diced oil-packed sun-dried tomatosun-dried tomatoes or sun-dried tomato pesto
- 2 tbsp extra-virgin olive oil 2 2tbsp tbspextra-virgin olive oil
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- 4 cups torn lettuce 4 4cups cupstorn lettuce
- 2 stalks celery hearts , thinly sliced2 2stalks celery heartcelery hearts, thinly sliced
- 1 small carrot , thinly sliced1 1small carrotcarrots, thinly sliced
Preparation
In large bowl, whisk together sun-dried tomato pesto, olive oil and pepper. Add lettuce, celery heart and carrot. Toss to coat.
