Napa Cabbage Slaw With Grilled Chicken

This crunchy summer salad makes a great light dinner. Keep any leftovers for lunch the next day. To scoop out the cucumber seeds, halve the cucumber, then run a spoon down the centre.

Ingredients

  • 2 2boneless skinless chicken breastboneless skinless chicken breasts, (about 1 lb/450 g total)
  • 1 pinch 1pinchsalt
  • 1 pinch 1pinchpepper
  • 4 cups 4cupslightly packed shredded napa cabbage
  • 1 1carrotcarrots, julienned or grated
  • 1 1sweet red peppersweet red peppers, thinly sliced
  • 1 1rib celery, thinly sliced diagonally
  • 1/2 1/2English cucumberEnglish cucumbers, halved lengthwise, seeded and thinly sliced diagonally
  • 2 2green oniongreen onions, thinly sliced
  • 1/3 cup 1/3cupsliced almonds, toasted

Soy Vinaigrette:

  • 2 tbsp 2tbspvegetable oil
  • 4 tsp 4tspunseasoned rice vinegar
  • 1 tbsp 1tbspsodium-reduced soy sauce
  • 2 tsp 2tspsesame oil
  • 1 pinch 1pinchsalt

Preparation

Sprinkle chicken with salt and pepper. Place on greased grill over medium-high heat; close lid and grill, turning once, until no longer pink inside, 12 to 15 minutes. Let stand for 5 minutes before slicing.

Soy Vinaigrette: Meanwhile, in large bowl, whisk together vegetable oil, vinegar, soy sauce, sesame oil and salt.

Add cabbage, carrot, red pepper, celery, cucumber and green onions; toss to coat. Top with chicken; sprinkle with almonds.

Creamy Tahini Slaw With Grilled Chicken

Replace soy vinaigrette with 2 tbsp olive oil, 4 tsp lemon juice, 1 tbsp tahini, 1 tbsp Balkan-style plain yogurt and 1/4 tsp each salt and pepper.
