Ingredients

  • 1 cup whole wheat couscous
  • 1/2 cup diced sweet red pepper
  • 1/2 cup frozen peas
  • 2 tbsp currants
  • 2 tbsp lemon juice
  • 1 tbsp extra virgin olive oil
  • 1/2 tsp dried mint
  • 1/2 tsp cinnamon
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • pinch cayenne pepper
  • 1 cup boiling water
  • 1/4 cup sliced green onions
  • 1/4 cup slivered almonds

Preparation

In large bowl, combine couscous, red pepper, peas, currants, lemon juice, olive oil, mint, cinnamon, salt, pepper; and pinch cayenne pepper. Pour in boiling water; cover and let stand for 5 minutes. Fluff with fork.

Add green onions and almonds; toss to combine.
