Ingredients
- 1 cup whole wheat couscous 1 1cup cupwhole wheat couscous
- 1/2 cup diced sweet red pepper 1/2 1/2cup cupdiced sweet red pepper
- 1/2 cup frozen peas 1/2 1/2cup cupfrozen peas
- 2 tbsp currants 2 2tbsp tbspcurrantcurrants
- 2 tbsp lemon juice 2 2tbsp tbsplemon juice
- 1 tbsp extra virgin olive oil 1 1tbsp tbspextra virgin olive oil
- 1/2 tsp dried mint 1/2 1/2tsp tspdried mint
- 1/2 tsp cinnamon 1/2 1/2tsp tspcinnamon
- 1/2 tsp salt 1/2 1/2tsp tspsalt
- 1/4 tsp pepper 1/4 1/4tsp tsppepper
- pinch cayenne pepper pinch pinchcayenne pepper
- 1 cup boiling water 1 1cup cupboiling water
- 1/4 cup sliced green onions 1/4 1/4cup cupsliced green oniononions
- 1/4 cup slivered almonds 1/4 1/4cup cupslivered almondalmonds
Preparation
In large bowl, combine couscous, red pepper, peas, currants, lemon juice, olive oil, mint, cinnamon, salt, pepper; and pinch cayenne pepper. Pour in boiling water; cover and let stand for 5 minutes. Fluff with fork.
Add green onions and almonds; toss to combine.
