Ingredients:

2 tsp (10 mL) butter
1/4 cup (50 mL) each diced carrot and onion
2/3 cup (150 mL) basmati rice
2/3 cup (150 mL) each chicken broth and water
Preparation:
In saucepan, melt butter over medium heat; cook carrot and onion until softened, 4 minutes. Stir in rice. Add chicken broth and water; bring to boil. Reduce heat, cover and simmer until tender and no liquid remains, about 20 minutes.
