Ingredients

  • 3 tbsp extra-virgin olive oil
  • 2 tbsp raspberry vinegar
  • 1 shallot or green onion, minced
  • 1 tbsp chopped fresh mint
  • 1 pinch salt
  • 1 pinch pepper
  • 1 pinch granulated sugar

Preparation

In small glass measure, whisk together oil, vinegar, shallot, mint, salt, pepper and sugar.

Tip: Makes enough for about 6 cups (1.5 L) greens, or four servings.
