Ingredients

  • 1/3 cup rice vinegar or cider vinegar
  • 1 tsp grated orange rind
  • 1/4 cup orange juice
  • 2 tbsp extra virgin olive oil
  • 2 tbsp liquid honey
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 3 cups finely shredded red cabbage
  • 1 cup grated zucchinis
  • 2 tbsp fresh parsley, chopped

Preparation

In large bowl, combine vinegar, orange rind and juice, oil, honey, salt and pepper. Add cabbage, zucchini and parsley; toss to combine.
