1/3 cup (75 mL) extra-virgin olive oil
3 tbsp (50 mL) lemon juice
2 tbsp (25 mL) thinly sliced green onions
1 clove garlic, minced
1/4 tsp (mL) each ground cumin and salt
Pinch granulated sugar. set dressing aside
Half english cucumber
4 cups (1 L)chopped hearts romaine lettuce
1 cup (250 mL) grated radishes
Preparation:
In measuring cup, whisk together olive oil, lemon juice, green onions, garlic, cumin, salt and sugar. Set dressing aside.
Cut cucumber in half lengthwise; thinly slice on diagonal. Place in salad bowl. Add romaine lettuce and radishes to cucumber in bowl. Add dressing and toss to coat well.
