Salmon Wraps with Fruit Salsa

Ingredients
- 1/4 cup 1/4cupminced fresh mint, (or 1/2 tsp/2 mL dried)
- 1/4 cup 1/4cuplight mayonnaise
- 1 tbsp 1tbsplime or lemon juice
- 1 tsp 1tspminced gingerroot, (or 3/4 tsp/4 mL ground ginger)
- 1 1green oniongreen onions, minced
- 1/4 tsp 1/4tspeach salt and pepper
- 2 2sockeye salmonsockeye salmons, drained
- 4 4large whole wheat tortillawhole wheat tortillas
- 2 cups 2cupsshredded lettuce Fruit Salsa
Preparation
In bowl, stir together mint, mayonnaise, lime juice, ginger, green onion, salt and pepper. Add salmon; mash to combine.
Place tortillas on work surface; top with shredded lettuce. Spoon one-quarter of the salmon mixture onto centre of each tortilla; top with fruit salsa. Fold in sides of tortilla and roll up from bottom; cut in half, if desired.
