Ingredients

  • 1/4 cup minced fresh mint, (or 1/2 tsp/2 mL dried)
  • 1/4 cup light mayonnaise
  • 1 tbsp lime or lemon juice
  • 1 tsp minced gingerroot, (or 3/4 tsp/4 mL ground ginger)
  • 1 green onion, minced
  • 1/4 tsp each salt and pepper
  • 2 sockeye salmons, drained
  • 4 large whole wheat tortillas
  • 2 cups shredded lettuce
  • Fruit Salsa

Preparation

In bowl, stir together mint, mayonnaise, lime juice, ginger, green onion, salt and pepper. Add salmon; mash to combine.

Place tortillas on work surface; top with shredded lettuce. Spoon one-quarter of the salmon mixture onto centre of each tortilla; top with fruit salsa. Fold in sides of tortilla and roll up from bottom; cut in half, if desired.
