Ingredients

  • 1 tbsp olive oil 1 tbsp olive oil
  • 1 onion , diced1 onion, diced

  • 1 lb lean ground beef 1 lb lean ground beef
  • 2 tsp chili powder 2 tsp chili powder
  • 1-1/2 tsp ground cumin 1-1/2 tsp ground cumin
  • 1-1/2 tsp ground coriander 1-1/2 tsp ground coriander

  • 1 cup rinsed drained black beans 1 cup rinsed drained black beans
  • 1/2 cup frozen corn kernels 1/2 cup frozen corn kernels
  • 2 tbsp lime juice 2 tbsp lime juice
  • 2 tsp liquid honey 2 tsp liquid honey
  • 2 green onions , chopped2 green onions, chopped
  • 4 whole grain hamburger buns , toasted4 whole grain hamburger buns, toasted
  • 3/4 cup shredded Monterey Jack cheese 3/4 cup shredded Monterey jack cheese

Preparation

In large skillet, heat oil over medium heat; cook onion, jalapeño pepper and garlic, stirring occasionally, until softened, 6 to 8 minutes.

Add beef; cook over medium-high heat, breaking up with spoon, until browned, about 5 minutes. Drain off fat.

Add chili powder, cumin, coriander and sa< cook for 1 minute. Add tomatoes, beans, corn, lime juice and honey; cook until slightly thickened, 4 to 5 minutes. Stir in green onions.

Divide evenly among bottoms of buns; sprinkle with cheese. Cover with tops of buns.
