For a magazine-worthy presentation, arrange beef kabobs on top of pearl couscous before spooning Tomato Mint Salad (see recipe link below) over the entire plate. A glass of red wine, such as Cabernet Sauvignon, is a not-to-be-missed accompaniment.

Ingredients

  • 1 lb beef strip loin grilling steaks, about 1 inch (2.5 cm) thick
  • 2 cloves garlic, minced
  • 1 tbsp vegetabIe oil
  • 1 tsp chili powder
  • 1/4 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp pepper
  • 1/4 tsp salt

Preparation

Trim beef; cut into cubes. In bowl, combine garlic, oil, chili powder, cinnamon, nutmeg and pepper; add beef and toss to coat. Let stand for 15 minutes. (Make-ahead: Cover and refrigerate for up to 8 hours.)

Thread beef onto 4 metal or soaked wooden skewers; sprinkle with salt. Broil about 5 inches (12 cm) from heat or grill, covered, over medium-high heat, turning once, until browned yet still pink inside, 8 to 10 minutes.
