Ingredients

  • 1 pkg (454 g) 1pkg (454 g)firm tofu or extra-firm tofu
  • 2 2cloves garlic, finely minced
  • 2 tbsp 2tbspsodium-reduced soy sauce
  • 1 tbsp 1tbspvegetable oil
  • 1 1sweet red peppersweet red peppers
  • 1 1sweet orange peppersweet orange peppers
  • 1 1sweet yellow peppersweet yellow peppers
  • 6 6green oniongreen onions, (white parts only)
  • Grilled Coleslaw Recipe

Jerk Barbecue Sauce:

  • 1 cup 1cupbottled strained tomatoes, (passata)
  • 2 tbsp 2tbspfancy molasses
  • 4 tsp 4tspprepared jerk sauce
  • 2 tsp 2tspmalt vinegar
  • 1/4 tsp 1/4tspdried thyme

Preparation

Jerk Barbecue Sauce: In pan, bring tomatoes, molasses, jerk sauce, vinegar and thyme to boil. Reduce heat and simmer until reduced to 1/2 cup (125 mL), 10 to 15 minutes. Set aside.

Meanwhile, cut tofu into 24 cubes. In bowl, toss tofu, garlic, soy sauce and oil; let stand for 10 minutes.

Cut each red, orange and yellow pepper into 24 pieces; cut each onion in half. Thread vegetables and tofu alternately onto soaked wooden skewers; brush with sauce.

Place on greased grill over medium-high heat; close lid and cook, turning and brushing with sauce, until vegetables are tender and slightly browned. Serve with coleslaw.
