Ingredients

Preparation

Sauce: In small bowl, whisk together soy sauce, vinegar, oyster sauce, sugar, water, cornstarch and pepper; set aside.

Slice beef across the grain into thin strips. In large deep skillet, heat 1 tbsp (15 mL) of the oil over high heat; stir-fry beef, in 2 batches, until browned yet still pink inside, 3 minutes. Transfer to bowl.

Add remaining oil to pan; stir-fry sliced onion, garlic and ginger over medium heat for 1 minute. Pour in sauce; reduce heat and simmer until thickened, about 2 minutes. Return beef mixture and any accumulated juices to pan. Stir in tomatoes and green onions; heat through, about 1 minute.
