2 cups (500 mL) cherry tomatoes, quartered
2 tbsp (25 mL) each minced fresh mint and lemon juice
2 thin green onions, sliced
Half jalape?epper, seeded and diced
1 tbsp (15 mL) vegetable oil
1/4 tsp (1 mL) salt
Preparation:
In bowl, toss together tomatoes, mint, lemon juice, green onions, jalape?epper, vegetable oil and salt. Let stand for 10 minutes before serving.
