Ingredients
- 1 lb mild Italian turkey sausage 1 lb mild Italian turkey sausage

- 1/4 tsp dried thyme 1/4 tsp dried thyme

Preparation
no longer pink in centre, 18 to 20 minutes. Slice thickly.
Meanwhile, in large bowl, whisk together oil, vinegar, mustard, honey, salt, pepper and thyme.
Add escarole, endive, carrot, apple, cucumber, walnuts and onion to bowl. Add sausage and toss to coat.
