  • 1/4 cup 1/4cupextra-virgin olive oil
  • 2 tbsp 2tbspapple cider vinegar
  • 1 tsp 1tspDijon mustard
  • 1 tsp 1tspliquid honey
  • 1/4 tsp 1/4tspsalt
  • 1/4 tsp 1/4tsppepper
  • 1/4 tsp 1/4tspdried thyme
  • 6 cups 6cupschopped loosely packed escarole
  • 2 cups 2cupschopped loosely packed curly endive
  • 1 1carrotcarrots, peeled and grated
  • 1 1Gala appleGala apple, cored and thinly sliced
  • 1/2 cup 1/2cupsliced English cucumber
  • 1/3 cup 1/3cupwalnutwalnuts, toasted and chopped
  • 1/4 cup 1/4cupsliced red onion

Broil or grill sausage over medium-high heat, turning occasionally, until browned and
no longer pink in centre, 18 to 20 minutes. Slice thickly.

Meanwhile, in large bowl, whisk together oil, vinegar, mustard, honey, salt, pepper and thyme.

Add escarole, endive, carrot, apple, cucumber, walnuts and onion to bowl. Add sausage and toss to coat.
