Ingredients

  • 1/4 tsp pepper 1/4 tsp pepper
  • 1/4 tsp dried thyme 1/4 tsp dried thyme
  • 6 cups chopped loosely packed escarole 6 cups chopped loosely packed escarole
  • 2 cups chopped loosely packed curly endive 2 cups chopped loosely packed curly endive
  • 1 carrot , peeled and grated1 carrot, peeled and grated
  • 1 Gala apple , cored and thinly sliced1 Gala apple, cored and thinly sliced
  • 1/2 cup sliced English cucumber 1/2 cup sliced English cucumber
  • 1/3 cup walnuts , toasted and chopped1/3 cup walnuts, toasted and chopped

Preparation

Broil or grill sausage over medium-high heat, turning occasionally, until browned and
no longer pink in centre, 18 to 20 minutes. Slice thickly.

Meanwhile, in large bowl, whisk together oil, vinegar, mustard, honey, salt, pepper and thyme.

Add escarole, endive, carrot, apple, cucumber, walnuts and onion to bowl. Add sausage and toss to coat.
