Ingredients

  • 6 Yukon Gold potatoes
  • 2 tbsp vegetabIe oil
  • 1 chopped onion
  • 2 minced cloves of garlic
  • 1/2 tsp dried thyme
  • 1 cup chicken stock
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1 tbsp chopped fresh parsley

Preparation

Peel potatoes; cut into 1/2-inch (1 cm) cubes. In nonstick skillet, heat oil over medium-high heat; cook potatoes, stirring, for 10 minutes or until browned.

Add onion, garlic and thyme; cook for 3 minutes. Add stock, salt and pepper; bring to boil. Reduce heat, cover and simmer for 10 minutes or until potatoes are tender.

Uncover and cook for 1 minute or until no liquid remains. Sprinkle with parsley.
