Preparation
Pit plums; cut into 1-inch (2.5 cm) chunks to make about 3 cups (750 mL). In saucepan, bring sugar, vinegar, star anise and pepper to boil over medium heat; stir in plums. Reduce heat, cover and simmer for 5 minutes; let cool.
(Make-ahead: Refrigerate in airtight container for up to 2 days; bring to room temperature to serve.)
