Ingredients

  • 3 cups torn romaine lettuce
  • 1 carrots grated
  • 1 celery chopped
  • 1/2 cup cubed cooked chicken
  • 1/4 cup thinly sliced red onion
  • 1/4 cup thinly sliced green onion
  • 1/4 cup toasted sliced almond
  • 2 tablespoons raisins
  • 2 tablespoons dried cranberries
Parsley Vinaigrette:
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons minced fresh parsley
  • 2 tablespoons lemon juice
  • 1 clove garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Method

Parsley Vinaigrette: In airtight jar, shake together olive oil, parsley, lemon juice, garlic salt and pepper. Set aside or refrigerate up to 2 days.

In large airtight container or bowl, combine lettuce, carrot, celery, chicken, green onions, almonds and raisins. Add vinaigrette and toss.
