?You can dust the bars with icing sugar just before serving if you like.

Ingredients

  • 1 cup butter softened
  • 1/2 cup icing sugar
  • 1 teaspoon vanilla
  • 1 3/4 cup all-purpose flour
  • 1/2 cup ground almonds
  • 1 1/4 cup apricot jam
  • 2 tablespoons brandy
  • 2 tablespoons orange juice
Topping:
  • 1 1/2 cup ground almonds
  • 1 cup granulated sugar
  • 2 eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon almond extract
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup sliced almonds toasted

Method

In large bowl, beat together butter, sugar and vanilla until fluffy. Using wooden spoon, stir in flour and ground almonds just until smooth paste.

With floured hands, press evenly into parchment paper–lined 13- x 9-inch (3.5 L) metal cake pan. Bake in 375?F (190?C) oven until golden, about 15 minutes. Let cool on rack.

Stir jam with brandy; spread over crust.

Topping: In bowl, stir together ground almonds, sugar, eggs, flour, almond extract, baking powder and salt until stiff and sticky. Drop by small spoonfuls over jam; spread evenly. Sprinkle with sliced almonds.

Bake in 375?F (190?C) oven until golden and firm to the touch, about 30 minutes. Let cool in pan on rack. Cut into bars. (Store layered between waxed paper in airtight container for up to 2 days or freeze for up to 1 month.)
