- 24 baby new potatoes scrubbed (about 2lb/1 kg)
- 1 tablespoon chopped fresh parsley
- 1 tablespoon vegetable oil
- 1/2 teaspoon pepper
In pot of boiling salted water, cover and cook potatoes until tender, about 7 minutes. Drain and return to pot over low heat for 30 seconds. Toss fresh parsley, vegetable oil and pepper.
