Onion and bacon can amp up any sandwich, and they take only a few minutes to cook. For easy grilling, choose a dense bread, because it won't fall apart easily when turned.

Ingredients

  • 1 sweet onion cut in scant 1/2-inch thick rounds
  • 1 tablespoon olive oil
  • 1 pinch salt
  • 1 pinch pepper
  • 4 slices back bacon
  • 8 thick slices multigrain bread
  • 4 slices Cheddar cheese
  • 1 tomato thinly sliced

Method

Brush onion with 1 tsp of the oil; sprinkle with salt and pepper. Place onion and bacon on greased grill over medium-high heat; close lid and grill, turning occasionally, until bacon is warmed through, about 4 minutes, and onion is softened, about 7 minutes.

Top 4 of the bread slices with Cheddar cheese, bacon, tomato and onion. Sandwich with remaining bread.

Brush both sides of sandwiches with remaining oil. Return to grill over medium heat; grill, covered and turning once, until cheese is melted, about 5 minutes.
