Baguette Tuna Melts

Ingredients

  • 1 can (6 oz/170g) solid white tuna drained
  • 3 tablespoons light mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 pinch pepper
  • 1/4 cup finely chopped celery
  • 1/4 cup finely chopped green onion
  • 8 cherry tomatoes quartered, or 1 plum tomato, seeded and chopped
  • 1 baguette 8 inches/20 cm or other crusty bread
  • 2 Cheddar cheese about 1-1/2 oz/45 g, cut in half
  • 2 Havarti cheese about 1-1/2 oz/45 g, cut in half

Method

In bowl, flake tuna. Stir in mayonnaise, mustard and pepper; stir in celery and green onions. (Make-ahead: Cover and refrigerate for up to 24 hours.) Stir in tomatoes.

Cut bread lengthwise in half. Lay, cut side up, on toaster oven tray. Spread tuna mixture over bread; top each with 2 strips cheese. Broil, watching closely, until cheese is bubbly, 1 to 2 minutes.
