I have made this for home and for pot lucks at work and it is always a hit...it is like stuffed baked potatoes in a soup (I didn't add bacon this time but have before and it was great...)

Ingredients

  • 8 potatoes
  • 5 tablespoons butter
  • 5 tablespoons margarine
  • 1 l milk
  • 1/2 bag baby carrot
  • 1 onion
  • 1 cup corn
  • 2 cups shredded Cheddar cheese
  • 2 cups sour cream

Method

1. Stab and bake potatoes for 1 hour at 400 F 2. When cooked cut into cubes 3. Slice carrots and onions 4. Add butter/margarine to pot and let melt 5. Once melted add flour slowly while stirring until thickened 6. Add milk while stirring 7. Add potatoes, carrots, onions, corn and cheese 8. Let cook for about 30 minutes 9. Add sour cream and stir 10. Let cook for additional 15 minutes and serve
