This is a recipe from my friend Barbara who died a number of years ago from breast cancer. We used to play bridge together once a week and Barbara always served these tasty snacks that were a big favourite with everyone.
Portion size4 servings
Toast sliced bread under the grill on one side only. Chop bacon and divide over the untoasted side of each slice of bread. Cover bacon with thinly sliced tomato, season with a little pepper then cover with grated cheese. Place under the grill until the cheese is brown and bubbly. If using regular sliced bread cut into 2 or 4 diagonal pieces and serve immediately.
