Nothing says summer like a pile of fresh-from-the-garden veggies. The steam that builds up in the foil packets cooks them to tender-crisp perfection. Serve this side with our delicious Cowboy Rib Eyes for the perfect summer meal.

Ingredients

  • 225 g green beans trimmed
  • half sweet red pepper sliced
  • half onion sliced
  • 2 cloves garlic thinly sliced
  • 4 fresh thyme
  • 1 tablespoon extra-virgin olive oil
  • pinch each salt and pepper

Method

On large rectangle of heavy-duty foil, arrange green beans, red pepper, onion, garlic and thyme. Drizzle with oil; sprinkle with salt and pepper.

Leaving room for air circulation, seal and place on grill over medium-high heat; close lid and grill, turning once, until beans are tender-crisp, about 20 minutes.
