This Greek and Turkish yogurt-based sauce is usually served as an appetizer or with grilled meats. Cool down any spicy sausage with a dollop of it and sprinkle the feta over top.

Ingredients

  • 1/2 cup shredded cucumber
  • 1/4 teaspoon salt
  • 1/2 cup Greek-style yogurt
  • 2 tablespoons frozen chopped spinach thawed and squeezed dry
  • 2 cloves garlic minced
  • 2 tablespoons chopped fresh dill
  • 2 teaspoons lemon juice
  • 1 pinch pepper
  • 1/3 cup crumbled feta cheese

Method

Mix cucumber with pinch of the salt; let stand for 10 minutes. Squeeze out moisture.

In small bowl, mix together cucumber, yogurt, spinach, garlic, dill, lemon juice, pepper and remaining salt. (Make-ahead: Cover and refrigerate for up to 2 days.) Garnish with feta cheese.
