Broccoli Scramble Quesadillas

Ingredients

  • 1 tablespoon butter
  • 1 cup chopped broccoli
  • 3 eggs
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 flour tortillas
  • 1/2 cup shredded Cheddar cheese
  • 1/3 cup salsa

Method

In nonstick skillet, melt butter over medium heat; cook broccoli until heated through, about 4 minutes.

Meanwhile, in bowl, whisk together eggs, salt and pepper; add to broccoli and cook until beginning to set, about 1 minute. Gently draw spatula across bottom of pan to form large, soft curds; cook until eggs are thickened and moist but no visible liquid remains, about 2 minutes.

Place 1 tortilla on rimmed baking sheet. Top evenly with egg mixture. Sprinkle with 1/3 cup (75 mL) of the cheese then remaining tortilla. Sprinkle with remaining cheese. Broil until cheese is melted. Cut into wedges; serve with salsa.
