Butternut Squash Cubes

Ingredients

  • 1 butternut squash (3 lb/1.5 kg total)
  • 2 tablespoons vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon paprika

Method

Peel, seed and cut squash into 1-inch (2.5 cm) cubes. Toss with vegetable oil, salt, pepper and paprika.

Spread on rimmed baking sheet; roast in 325°F (160°C) oven until tender, about 30 minutes.
