Button Mushroom Salad

If your child is a fan of mushrooms, try this salad for a different take on lunch. Pack a whole wheat pita and lettuce leaf in separate plastic bags for him or her to stuff with the salad at lunchtime.

Ingredients

  • 4 cups button mushrooms halved
  • 1 cup chopped sweet red pepper
  • 4 thinly sliced green onions
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 large lettuce leaves

Method

In large bowl, gently toss mushrooms, red pepper, green onions, balsamic vinegar, parsley, olive oil, salt and pepper. Serve in 4 large lettuce leaves.
