This simple side dish is a weeknight superstar. It's a fresh, tangy alternative to mashed potatoes.

Ingredients

  • 1 cauliflower cut in florets
  • 2 cloves garlic smashed
  • 1/2 cup 2% plain Greek yogurt
  • pinch salt
  • 1 tablespoon chopped fresh parsley optional

Method

In saucepan of boiling lightly salted water, cook cauliflower and garlic until tender, about 10 minutes.

Drain well.

In food processor, puree together cauliflower, garlic, yogurt and salt until smooth. Sprinkle with parsley (if using).
