Ingredients

  • 2 clove
  • 4 tea (such as Darjeeling or orange pekoe)
  • 1/3 cup granulated sugar
  • 1 cinnamon
  • 2 gingerroot
  • 2 cardamom pod broken
  • 1/4 teaspoon aniseed

Method

In large heatproof measure or bowl, steep tea in 8 cups (2 L) boiling water for 4 minutes. Discard bags.

Meanwhile, in saucepan, bring sugar, cinnamon, ginger, cloves, cardamom, aniseeds and 1 cup (250 mL) water to boil. Reduce heat to medium-low; simmer until clear and spices infuse, about 5 minutes. Add to tea; let cool to room temperature, about 30 minutes. Refrigerate until cold, about 2 hours.

Strain through cheesecloth-lined sieve into pitcher. Serve with ice cubes.

Makes 8 cups (2 L), or 8 servings.
