This side dish is a family recipe on my husband's side. It steals the show from the ham or turkey every time we have them. My Mother in law created this potato masterpiece that I call "Cheddar and Chive Potatoes" I believe it is best served as part of a turkey or ham dinner. Will also work with roasts as well. Enjoy!

Preheat oven to 375 degrees F. Boil 4 cups of lightly salted water on high heat. Peel skins off of potatoes and cut them in half. Place peeled potatoes in the boiling water. Grate Canadian Cheddar cheese and measure into 1/2 cup and also measure 1/4 cup and set aside. Chop chives and measure one tablespoon. Boil Potatoes until they are tender but not too soft. Approximately cook potatoes about 10 - 12 minutes in the boiling water. Remove the potatoes from heat and place in a strainer, allow potatoes to cool. Once potatoes have cooled grate the potatoes into a large bowl using a cheese grater. Add sour cream and chives and 1/2 cup of grated cheddar. Mix together. Place combined mixture into a small sized casserole dish and sprinkle remaining cheese on top. Bake in the oven for 20 minutes until browned. Enjoy!
