This is a favourite on Wednesday nights when everyone is home for 6pm. Who doesn't like a tummy full of warm cheesy brocolli on rice? True comfort food!

1. In a large skillet over medium heat, cook onion, celery and broccoli in butter for 5 minutes (salt + pepper to taste). In a separate pan heat soup and milk and heat thoroughly. Remove from heat, add cheese and stir until cheese has melted. 2. Spread cooked rice in a greased 8-inch square baking dish. Pour broccoli/cheese mixture over; do not stir. 3. Bake, uncovered, at 325*F (160*C) for 30 to 35 minutes, spinkle additional cheese on top for the last 5 minutes and put under the broiler until hot and bubbly.MMM!
