I get bored with always cooking boiled or mashed potatoes and my son really isn't all that crazy about potatoes either. He is; however, crazy about mushrooms and cheese, so I decided to combine them for this great potato dish. Everyone loved it and it was so good that I would not hesitate to serve it to company.

cream of mushroom soup
1. Wash and boil baby potatoes for 15 minutes 2. While potatoes are boiling; fry mushrooms and shallots in olive oil until shallots are translucent and mushrooms are slightly brown 3. Place cooked potatoes in an oven safe dish and add fried shallots and mushrooms, Mozzarella cheese, Parmesan cheese, cream of mushroom soup and pepper 4. Mix all ingredients together and top with a sprinkle of Mozzarella and Parmesan cheese. 5. Bake at 350 F for 30 minutes and finish off with broiling until cheese on top is golden brown. Note: buy already sliced mushrooms and shredded Mozzarella cheese to decrease preparation time.
