Chop chicken breast meat into bite size pieces. Place chicken pieces in 8" by 8" baking pan. Mix one can of cream of mushroom or cream of chicken soup with the 1 cup of sour cream. Pour over cut up chicken pieces. Sprinkle parsley over this. Cover with a layer of prepared Stove Top Stuffing. Bake uncovered for 1 hour at 350*F or 176.5* C. You may use leftover cooked chicken or turkey. Adding broccoli will extend the dish and give you a meal in one.
