Chicken salad is a great way to use up grilled or roasted leftovers. Pack the salad and rolls separately, and let your child assemble his or her own mini sandwiches at school. Round out the lunch with milk, a handful of airpopped popcorn and some raisins.

Ingredients

  • 1/2 cup diced cooked chicken
  • quarter McIntosh apple cored and diced
  • 1 tablespoon sliced green onion (dark green part only)
  • 1 tablespoon light mayonnaise
  • pinch each salt and pepper
  • 2 dinner rolls (about 3 inches/8 cm long), halved

Method

In bowl, stir together chicken, apple, green onion, mayonnaise, salt and pepper. (Make-ahead: Refrigerate in airtight container for up to 2 days.) Sandwich half of the chicken mixture in each roll.
