Easy chicken and barley one pot meal with a little bit of everything.

Ingredients

  • 2 teaspoons thyme
  • 2 tablespoons canola oil
  • 1 1/2 lb cubed chicken breast (boneless, skinless)
  • 1 1/2 lb cubed chicken thigh (boneless, skinless)
  • 2 onions finely diced
  • 2 cups mushrooms chopped
  • 2 green peppers diced
  • 1 1/3 cup pearl barley
  • 1 can chopped tomatoes
  • 3/4 cups chicken broth (Campbell's)
  • 1 pinch salt
  • 1 pinch pepper
  • 6 parsley sprigs (garnish)

Method

Heat oil on medium and brown chicken in an oven friendly pot. Add onions and let cook until softened. Add mushrooms and cook until softened. Stir to prevent sticking. Add green pepper, barley, tomatoes, broth, and thyme. Season with salt and pepper and mix well. Cover and bake at 350 F for 1 hour or until barley is tender and liquid is absorbed. Garnish with parsley.
