Ingredients

  • 1 onion diced
  • 2 cloves garlic minced
  • 2 teaspoons oil
  • 1 1/2 lb chicken breast cubed
  • 6 cups chicken broth
  • 4 tomatoes chopped
  • 2 cups mushrooms
  • 1 lime juiced
  • 2 cups wild rice cooked

Method

Saute diced onions and minced garlic in oil until onion begins to soften.

Add chicken and cook for 2 minutes. Add chicken broth, tomato, mushrooms and juice from one lime. Simmer until chicken is cooked through.

Add cooked wild rice and serve.
