chicken noodle casserole

a great use for leftover chicken or turkey great for company

  • 3 cups broad egg noodles
  • 1 1/2 cup diced cooked chicken
  • 1/2 cup diced celery
  • 1/2 cup diced red pepper
  • 1 tin (10 oz) cream of chicken soup
  • 1 tablespoon pimento
  • 1 cup grated Cheddar cheese
  • 1 pinch salt
  • 1 pinch pepper


cook egg noodles in boiling water for eight minutes, drain and rinse. add all other ingredients to noodles (saving a small amount of the cheese to put on top). put in a greased 2 quart casserole dish, cook in a 350o OVEN for 30 minutes with a cover on and the last 10 minutes with the cover off.
