Step One: In large pot, saute onion and garlic in oil. Add water, chicken, salt, pepper, parsley, and bouillon cubes. Bring to a boil, then reduce and simmer until chicken is done. Remove chicken and shred. Step Two: Add remaining ingrediants to the broth. Simmer 30 minutes. Add shredded chicken and heat through. Step Three: Serve soup in bowls, garnish with shredded cheese, crushed nacho or corn chips, and sour cream.
