You can make this recipe up to 24 hours ahead of time, just keep it chilled in the fridge until ready to serve. Makes an excellent and healthy side dish.

Ingredients

  • 2 cans chickpeas
  • 1/4 cup onion chopped
  • 1/4 cup celery thinly sliced
  • 1/4 cup radish thinly sliced
  • 1/4 cup chives minced
  • 1/2 cup red wine vinegar
  • 1/2 cup balsamic vinegar
  • 1 cup cherry tomatoes quartered
  • 1/4 cup feta cheese

Method

Mix first 7 ingredients together in a mixing bowl. Cover and place in fridge for up to 24 hours. Add tomatoes and feta just before serving.
