Chickpea Salad

Awesome and healthy salad that tastes as good as it looks. Serve as a side dish with burgers, steaks, chicken or fish. Great for a potluck or buffet... there won't be any left over!

  • 1 can chickpea
  • 1 cup celery chopped
  • 1/2 cup English cucumber chopped
  • 1/2 cup red bell pepper chopped
  • 2 cloves garlic finely chopped
  • 8 large olives sliced
  • 2 tablespoons dried parsley
  • 3 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1/4 teaspoon pepper
  • 1/4 teaspoon oregano
  • 1 cup old Cheddar cheese crumbled in small chunks
  • 2 green onions chopped


Rinse and drain chickpeas. Mix olive oil, lemon juice, oregano, parsley, pepper and garlic together in a large bowl. Add all vegetables and chickpeas. Add olives and cheese and mix gently. Cover and refrigerate at least two hours, or preferably overnight.
