chili w/lettuce

  • 1 lb lean ground beef
  • 1 lb lean ground chicken
  • 1 medium onion
  • 1 red pepper
  • 1 green pepper
  • 1 cup sliced mushroom
  • 3 celery stalks chopped
  • 1 cup grated marble cheese
  • 1/2 head lettuce
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 2 teaspoons chili powder
  • 1/2 teaspoon garlic
  • 1 can whole tomatoes (blend in blender for a couple of seconds)
  • 1 can kidney bean
  • 1 bag tortilla chip (optional)


Brown meat and drain off any extra fat. Add all vegetables except for lettuce and cook for a few minutes. Add 1/2 of the spices except for chili powder and stir continue cooking on low heat. Add blended tomatoes, kidney beans and remainder of spices including chili powder. Let simmer for 10 to 15 minutes. Cut lettuce into bite size pieces. Place lettuce on individual serving dishes with a handful of grated cheese and then top with chili. Eat with tortilla chips for an extra filling meal.
