Ingredients

  • 3 cups buttermilk
  • 1 cucumber peeled and chopped
  • 1/3 cup sour cream
  • 1 tablespoon lemon juice
  • 1 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1 pinch white pepper
  • 1 pinch black pepper
Garnish:
  • 1 half cucumber grated and squeezed
  • 4 radishes grated
  • 2 tablespoons minced fresh chives
  • 2 tablespoons minced fresh dill

Method

In blender, blend together buttermilk, cucumber, sour cream, lemon juice, sugar, salt and pepper until smooth. Cover and refrigerate until cold, about 1 hour.

Garnish: Pour soup into serving bowls; sprinkle with cucumber, radishes and chives.
