In large skillet, heat oil over medium heat; cook onion, salt, pepper and nutmeg until onion is softened and light golden, about 8 minutes.
 
Stir in kale, garlic, pork, cider and vinegar; bring to boil. Reduce heat and simmer, stirring occasionally, until kale is wilted and almost no liquid remains, about 5 minutes.
