Cider-Sautéed Kale and Pork

Apple cider adds a touch of sweetness to this quick dish of healthy greens and shredded pork. Serve over creamy polenta or cooked rice for a complete, stick-to-your-ribs meal.

Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 white onion thinly sliced
  • 1/4 teaspoon each salt and pepper
  • pinch nutmeg
  • 1 bunch kale trimmed and shredded
  • 2 cloves garlic thinly sliced
  • 2 cups Slow Cooker Shredded Pork
  • 1 cup apple cider
  • 2 tablespoons apple cider vinegar

Method

In large skillet, heat oil over medium heat; cook onion, salt, pepper and nutmeg until onion is softened and light golden, about 8 minutes.
 
Stir in kale, garlic, pork, cider and vinegar; bring to boil. Reduce heat and simmer, stirring occasionally, until kale is wilted and almost no liquid remains, about 5 minutes.
