Citrus Ginger Couscous

Ingredients

  • 1 tablespoon vegetable oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 sweet red pepper chopped
  • 1 teaspoon grated gingerroot
  • 1 teaspoon grated lime rind
  • 1 teaspoon grated lemon rind
  • 1 1/2 cup vegetable stock
  • 1 cup whole wheat couscous
  • 1 cup regular couscous
  • 1/2 cup chopped cucumber
  • 1/4 cup peanut
  • 2 green onions chopped

Method

In small saucepan, heat vegetable oil over medium heat; cook onion, garlic, salt, pepper, sweet red pepper, gingerroot and grated lime stirring often, until softened, about 4 minutes.

Pour in vegetable stock bring to boil. Stir in 1 couscous. Remove from heat. Cover and let stand for 5 minutes.

Add cucumber, peanuts and green onions; fluff with fork.
