Confetti Pepper Rice

Ingredients

  • 1/4 teaspoon salt
  • 1 cup long grain rice
  • 1 teaspoon sesame oil
  • 1 teaspoon vegetable oil
  • 1 carrots diced
  • 1/2 sweet green pepper diced
  • 1/2 sweet red pepper diced
  • 2 green onions chopped

Method

In saucepan, bring 2 cups (500 mL) water and salt to boil; stir in rice. Reduce heat to low; cover and cook until tender and no liquid remains, about 20 minutes.

Meanwhile, in nonstick skillet, heat oil over medium-high heat; saut?arrot and red and green peppers until tender-crisp, about 3 minutes. With fork, stir into rice along with onions.
