Cornbread Burger Casserole

  • 1 lb lean ground beef
  • 1 onion soup mix
  • 1 can tomato soup
  • 1 can kernel corn
  • 1/2 cup flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup cornmeal
  • 3/4 cups milk
  • 2 eggs slightly beaten
  • 2 cups shredded cheese


Brown beef in skillet. Add onion soup mix, tomato soup, and corn. Cover and simmer about 5 minutes. Sift flour, salt, baking soda into a bowl. Add corn meal. Combine milk and eggs in a small bowl. Make a well in dry mixture and add milk mixture until lightly combined. Spoon meat mixture into 2 quart casserole dish. Sprinkle with 1/2 cheese. Cover with batter and sprinkle remaining cheese on top. Bake uncovered. Top will be crusty.
