Cranberry Chipotle Barbecue Sauce

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion chopped
  • 1 clove garlic minced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 1/2 cup fresh cranberry
  • 1 1/2 cup frozen cranberries
  • 1 cup water
  • 1/2 cup orange juice
  • 1/4 cup packed brown sugar
  • 2 tablespoons raspberry vinegar
  • 2 tablespoons red wine vinegar
  • 2 tablespoons fancy molasses
  • 1 teaspoon grated orange rind
  • 1 teaspoon adobo sauce
  • 1 teaspoon seeded and minced chipotle pepper

Method

In saucepan, heat oil over medium heat; fry onion and garlic, stirring often, until softened, 5 minutes. Add ginger, cloves, salt and pepper; cook for 1 minute.

Add cranberries, water, orange juice, brown sugar, vinegar, molasses, orange rind, chipotle pepper and adobo sauce; bring to boil. Reduce heat and simmer, stirring often, until reduced by one-third and cranberries pop, 20 minutes. Let cool slightly. Transfer to blender; purée until smooth. (Make-ahead: Refrigerate in airtight container for up to 3 days.)
